Basic Brewing: Best suited to a clay pot or gaiwan. Rinse twice, then brew for 20 seconds with 200 degree water for the first drinkable infusion.

Chi tse Beeng, aged pu-erh tea :- beeng means "cake" and chi tse

 means "seven sons". The term "Chi tse Beeng" comes from the Chinese 七字饼, which in modern pinyin would be "Qizi bing." It translates as "seven cakes", and comes from the traditional method of packing pu-erh tea cakes in stacks of seven for convenient transport.

Our chi-tse beeng is a 2001 raw tea pu'er cake from the "Chinese National Native Produce & Animal By-Products Import & Export Corporation, Yunnan Branch," (CNNP) the state-owned organization that controlled pu'er tea manufacturing until around 2003. Pu-erh raw teas from 2001 are starting to become scarce on the market place, and starting to mature as aged pu-erh tea, thus making them collectibles which command higher prices. Raw aged pu-erh tea, such as this tea, have smooth and complex flavors without the smookiness or bitterness of new raw pu'er teas. They also have a longer and sweeter finish and can be brewed nearly 20 times in a gaiwan or clay pot before losing their flavor, depending on water temperature and time brewed.

This cake is from the Menghai Factory, one of the most famous and well-reputed factories to previously operate under the CNNP. The Menghai region has ideal pu-erh growing characteristics, including an average altitude of above 1,500 meters.
