Our fine tieguanyin tea - which is also sometimes called tikuanyin or simply just tie tea

- is a quality example of Tie Guan Yin tea. Tie Guan Yin generally is a special tea as it is considered the finest of all oolongs. Instead of picking the most tender, younger leaves - as is the case with most of the other green teas - the leaves used for tieguanyin are mature and large. After picking, the leaves are shaken in a basket 5 or 6 times in order to bruise the edges and thereby allow the required amount of oxidation to occur. Leaves are then pan fried, rolled, and twirled. Tieguanyin leaves are described as "having the head of a dragonfly with the body of a snail and the legs of a frog."

These dense leaves and its legendary connection with the Goddess of Mercy give this tea its name: "Tie" literally means Iron, and refers to the dense leaves. "Guan Yin" refers to the Goddess of Mercy, who is said to appear to a monk in his dreams, revealing the location of the bush that produces these delicious leaves. Hence this tea's is also famously called "iron goddess" or "iron goddess of mercy."
