Xuan’s dong ding oolong - which is also often referred to as tung ting oolong or just tung ting tea

- is one of the finest Taiwan has to offer. The leaves are carefully bruised, roasted, and rolled into part-green part-black spheres, which expand like magic into full leaves in your teapot, revealing broad full leaves with jagged edges, and leaving behind an amber-colored brew that’s clean and complex.

The mountain itself is also worth mentioning. Dongding Mountain is an extension of Phoenix Mountain in Guangdong, home of another famous oolong tea, Feng Huang Dan Cong. The words Dong Ding, which means frozen peak, is rather surprising to those familiar with Taiwan – it never snows there! The name is actually a reference to the conditions of the mountain – jagged peaks, slippery from the constant rain, and low visibility from the incessant fog. It’s said that in order to harvest this tea, you must walk with tense tip-toes, called “frozen needle toes” by the Taiwanese.

Tung ting oolong, like many of China’s other finest teas, has an imperial connection. It begings with a man from Taiwan’s Nantou County named Lin Feng Chi. He heard of a test being given in Fujian Province, across the Taiwan Strait. Those who performed well could earn a comfortable job working for the government. He thought to himself, “I’m an intelligent, honest, passionate, and patriotic man; this is a perfect opportunity for me. However, Lin came from a poor family, and could not afford passage across the Strait. The people of his village, wishing for his success, decided to extend a helping hand, and donated the money for him to go to Fujian Province. Before he departed, they told him, "Remember when you get to the mainland to tell them about the thoughtful hearts of the Taiwanese people."

Lin went to Fujian and performed very well on the test, earning a government post that he held for several years. After a while, he began to think about Taiwan, and decided to return home. On his voyage back, he carried with him 36 seeds from the famous tea plants of Fujian Province. He gave them to the villagers in his home town, and they planted and cultivated the seeds with great dedication. After the passage of several more years, Lin was summoned to Beijing by Emperor Dao Guang. As a gift for the emperor, he took several leaves of tung ting oolong tea from his homeland. The Emperor, after drinking some of the tung ting tea, responded with a simple, "好茶, 好茶, " or "good tea, good tea."
