Everyday Tie Guan Yin - Oolong Tea, 100g

Tie Guan Yin in general is a special tea, considered to be the finest of all oolongs. Rather than picking the youngest and most tender leaves, like most green teas, the leaves used for Tie Guan Yin are mature and large. After picking, they are shaken in a basket 5 to 6 times to bruise the edges and create the desired level of oxidation. Leaves are then pan fried, rolled, and twirled. The leaves are described as having the head of a dragonfly, the body of a snail, and the legs of a frog. They are also very dense, which is explains why it is called “iron” or “tie.”....
